Prancūziškas “FLAN” pyragas

Labai mėgstu “IKI” prekybos centuose pirktus Flan pyragėlius, bet niekur nerasdavau recepto. Supermamoje Bea yra aprašiusi šį pyragą, bet skonis ir sudėtis kaip mano bandyto ispaniško flan pyrago, t.y. kaip kiaušinienės. Po ilgų ieškojimų galiu drąsiai sayti “eurika” (radau):  http://www.famousfrenchdesserts.com/medieval-dessert-recipes.html Pasirodo tai yra Viduramžiais Prancūzijoje išplitęs desertas kartais dar vadinamas “Parisian Flan” (Paryžietiškas apkepas).



Tešla:


100 g. margarino,


100g. cukraus,


1 kiaušinis,


1/2 šaukštelio kepimo miltelių,


200 g. miltų.


Įdaras:


4 puodeliai pieno,


4 dideli kiaušiniai,


2/3 puodelio cukraus,


1/4 puodelio kukurūzų krakmolo,


žiupsnelis muskato (nebūtina),


žiupsnelis cinamono (nebūtina),


pakelis vanilinio cukraus.


Margariną ištirpdau mikrobangėje ir iš likusių tešlai skirtų produktų išminkau tešlą (turi gautis ne per kieta, kad būtų galima aplipdyti kepimo formos kraštus). Tešlą kelioms minutėms dedame į šaldytuvą, kol paruošime įdarą.


Įdarui užviriname pieną su cukrumi ir vaniliniu cukrumi. Kai užvirs nukaičiamia. Puodelyje išmaišome krakmolą su šlakeliu šalto pieno. Krakmolo aš dėjau šiek tiek daugiau, nei nurodyta recepte. Krakmolo masę pilame į užvirintą, nukaistą pieną ir maišant kaitiname ant silpnos ugnies (neleiskite užvirti). Procesas panašus kaip gamintumėte kisielių. Pieno masė tuėtų pradėti tirštėti. Nukaičiamia.


Atskirame inde suplakti kiaušinius. Naudojau 5 kiaušinius (nes neturėjau didelių). Išplaktus kiaušinius įmaišyti į pravėsusią pieno masę ir visą šitą įdarą supilti į tešla aplipdytą kepimo formą.


Gaminimas užtrunka ~20min. Kepti ~40min. 180oC orkaitėje. Atvėsinti.

P.S. Kukurūzų krakmolo būna pirkti didžiuosiuose prekybos centruose Dr.Ottker ant pakelio užrašyta “Gustin” prie standiklių, želė, pudingų… Bulvių krakmolas netinka, nes įdaras nestings.

    Labai panasus i "IKI" gamini :) Saunu. Tik man idomu kaip yra su glaistu? Nes siame recepte nerandu sios dalies. Kiek ziurejau kitus Flan receptus, juose nera teslos, bet ten viena is aiskiu daliu - lydyto cukraus virsutinis sluoksnis. Tokia plutele. Cia jo nera. Jis nereikalingas?

  4. na, esu kepusi prancūziškąjį/paryžietiškąjį flan, ir tokia kaip ir plutelė/glaistas - it parduotuvėje - savaime pasidaro ant pyrago jam kepant :)
